Mushroom Lasagna

Mushroom lasagna is a rich and flavorful dish, perfect for a family Sunday or special occasions. Here’s how to prepare it:

Ingredients

  • 250 g of lasagna (fresh or dry that need cooking)
  • 500 g of mushrooms (champignon, porcini, or mixed)
  • 1 clove of garlic
  • Parsley to taste
  • 400 ml of béchamel sauce
  • 200 g of grated cheese (parmesan or pecorino)
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation

  1. Clean the mushrooms with a damp cloth and slice them. In a large pan, heat a drizzle of olive oil with the garlic clove and lightly sauté.
  2. Add the sliced mushrooms and let them cook until they become golden. Season with salt and pepper to taste, then add the chopped parsley. Mix everything and set aside.
  3. Prepare the béchamel sauce: you can buy it ready-made or prepare it yourself following the classic recipe with butter, flour, and milk.
  4. Butter a baking dish and start assembling the lasagna: spread a first layer of béchamel, then lay down the lasagna sheets, add a layer of mushrooms, and sprinkle with grated cheese.
  5. Continue to overlap layers in the same order until all the ingredients are used up: béchamel, lasagna sheets, mushrooms, and cheese.
  6. Make sure to finish with a generous layer of béchamel and grated cheese.
  7. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the surface of the lasagna becomes golden and crispy.
  8. Once cooked, let the lasagna rest for 10 minutes before serving.

Lasagna is a dish that lends itself to multiple variations, and this version with mushrooms is particularly loved in autumn when fresh seasonal mushrooms can be found. In some Italian recipes, a handful of grated truffle is also added for an extra touch of elegance and flavor.
