Mushroom Kisses

Ingredients

  • 500 g of mushrooms (champignon)
  • 200 g of spreadable cheese (e.g., Philadelphia)
  • 50 g of grated Parmesan cheese
  • 1 clove of garlic
  • Parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Clean the mushrooms by removing the dirt. Remove the stems so that a cavity is created for the stuffing.
  2. Finely chop the mushroom stems and set aside; they will be used for the filling.
  3. In a frying pan, heat a drizzle of extra virgin olive oil and add a garlic clove. When the garlic is golden, add the chopped stems and sauté until they become soft.
  4. Remove the garlic and transfer the chopped stems to a bowl. Allow to cool slightly.
  5. To the mushroom mixture, add the spreadable cheese and Parmesan, then mix well until you have a uniform mixture. Season with salt and pepper and add chopped parsley to your taste.
  6. Take the mushroom caps and stuff them with the cheese and mushroom mixture using a teaspoon.
  7. Arrange the stuffed mushrooms on a baking sheet lined with parchment paper and cook in a preheated oven at 180 °C for about 15-20 minutes, or until the mushrooms are tender and the surface is golden.
