Mushroom Croquettes

Mushroom croquettes are a great appetizer or a tasty main course, and I can provide you with a version with an Italian twist. Here is how to prepare them:

Ingredients

  • 500 g of mushrooms (champignons, porcini, or a mix of your choice)
  • 2 cloves of garlic
  • Parsley to taste
  • 2 eggs
  • 100 g of grated Parmesan cheese
  • 100 g of breadcrumbs
  • Salt and pepper to taste
  • Extra virgin olive oil (or frying oil)
  • Flour to taste for breading

Preparation

  1. Clean the mushrooms by removing the earthy part of the stem and quickly rinse them under water. Cut them into not too small pieces.

  2. In a frying pan, heat some EVO oil and add the garlic cloves to flavor the oil. Then, remove the garlic and add the mushrooms.

  3. Cook the mushrooms until they have lost all their water and start to brown. At this point, add the chopped parsley and adjust with salt and pepper. Let them cool.

  4. Meanwhile, in a bowl, beat the eggs with the grated Parmesan cheese.

  5. Once the mushrooms are cool, coarsely chop them with a knife or a food processor.

  6. Add the chopped mushrooms to the mixture of eggs and Parmesan, and mix well.

  7. Add breadcrumbs until the mixture is firm enough to form croquettes with your hands.

  8. Shape the croquettes, coat them in flour, then again in the beaten egg (add another egg if necessary) and finally in the breadcrumbs.

  9. In a frying pan, heat a generous amount of frying oil and, when hot, fry the croquettes until they are golden on all sides.

  10. Drain them on absorbent paper to remove excess oil and serve them hot.

Curiosity

Mushroom croquettes can be a good base to experiment with different flavors. For example, you can add chopped walnuts or blue cheese to the mixture for a stronger taste. Additionally, they are a very popular dish in Italian trattorias, each boasting its own “secret recipe”. Enjoy your meal!
