Ingredients

For the crepes:

Preparation

For the crepes:

  1. In a bowl, beat the eggs with a pinch of salt.
  2. Add the sifted flour alternately with the milk, stirring continuously to prevent lumps from forming. You should get a smooth batter.
  3. Let the batter rest for about 30 minutes.
  4. Heat up a non-stick pan and lightly grease it with butter. Pour a small amount of batter, tilting the pan to spread it evenly.
  5. Cook the crepe for 1-2 minutes per side until they are lightly golden brown. Repeat until all the batter is used up.

For the mushroom cream:

  1. Clean the mushrooms, slice them finely, and cook them in a pan with oil and garlic until golden brown.
  2. Add the cream and parsley, season with salt and pepper, and cook until the cream has slightly reduced.
  3. Remove the garlic and set aside.

Assembling the crepes:

  1. Take a crepe and spread some mushroom cream on it, add a few slices of fontina, and close it like a bundle or roll it up.
  2. Arrange the filled crepes in a previously buttered baking dish.
  3. Dust with Parmesan and a few flakes of butter.
  4. Bake at 200 °C for about 15 minutes or until the cheese is well melted and browned.
