Funghetti Cookies

Mushroom-shaped cookies are cute and delicious treats, often associated with holiday periods like Christmas. Here’s how to make them:

Ingredients

For the dough:

  • 300 g of all-purpose flour
  • 150 g of powdered sugar
  • 150 g of butter at room temperature
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt

For the decoration:

  • 100 g of dark chocolate
  • Powdered sugar as needed for dusting

Preparation

  1. In a large bowl, cream the soft butter with the powdered sugar until smooth.
  2. Add the egg, vanilla extract, and a pinch of salt, and mix well.
  3. Then incorporate the sifted flour, working the dough until it becomes smooth and homogeneous.
  4. Shape the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.
  5. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  6. After the resting time, take small portions of the dough and form balls for the base of the mushroom and cylinders for the stem.
  7. Place the balls and cylinders on the prepared tray, ensuring to leave space between them.
  8. Bake in the oven for 10-12 minutes or until the cookies are slightly golden.
  9. Remove from oven and let the cookies cool completely.
  10. Meanwhile, melt the dark chocolate in a double boiler or microwave.
  11. Once the cookies are cool, dip the top of the balls into the melted chocolate to simulate the mushroom cap and gently attach the cylinder to the base.
  12. Allow the chocolate to dry, and if desired, dust with powdered sugar before serving.
