  2. In a large bowl, beat the eggs with a pinch of salt and pepper until smooth.
  3. Add the milk and extra virgin olive oil, continuing to stir.
  4. Mix in the sifted flour with the baking powder, stirring to prevent lumps.

  6. Cut the smoked salmon into strips and add it to the other ingredients. If desired, also add the chopped chives for a touch of freshness.
  7. Line a muffin tin with paper cases or grease and flour the cavities if the tin is silicone or metal.
  8. Fill each cavity with the mixture up to three-quarters of their height.
  9. Bake the muffins in the preheated oven for 20-25 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.
  10. Allow them to cool before serving.

Fun fact

Smoked salmon is an ingredient widely used in Nordic countries and is appreciated in Italy mainly as an ingredient for appetizers and first courses, such as risottos or pasta with salmon. The combination with feta is not typical of Italian cuisine but can offer an interesting contrast of flavors, especially if you choose a good quality feta.

Muffins with feta and salmon are a great choice for a brunch or an aperitif. If you want to bring an even more Italian touch, you might substitute the salmon with bresaola and the feta with soft goat cheese, for an equally rich flavor but decidedly more Mediterranean.
