Chestnut Flour and Chocolate Muffins

Chestnut flour and chocolate muffins are a treat that combines the sweetness of chestnut flour with the richness of chocolate. Here’s how to make them:

Ingredients

  • 150 g of chestnut flour
  • 100 g of all-purpose flour
  • 100 g of sugar
  • 100 g of melted and cooled butter
  • 2 eggs
  • 120 ml of milk
  • 100 g of dark chocolate
  • 1 packet of baking powder
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 180 °C (350 °F) and prepare a muffin tin by lining the individual cavities with paper cups.
  2. In a bowl, sift together the two types of flour and the baking powder. Add a pinch of salt.
  3. Break the dark chocolate into chunks or roughly chop it, leaving some larger pieces to add texture to the muffins.
  4. In another bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
  5. Add in the melted and cooled butter to the egg mixture and mix well.
  6. Also incorporate the milk into the liquid mixture, stirring again to blend all the ingredients.
  7. Now combine the dry ingredients (flours, baking powder, salt) with the liquid mixture, stirring with a wooden spoon or a spatula until you have a uniform batter.
  8. Finally, fold the chocolate chunks into the batter.
  9. Fill each paper cup about two-thirds full with the prepared mixture.
  10. Place the muffins in the preheated oven and bake for about 20-25 minutes or until the muffins are well risen and golden brown.
  11. Do the toothpick test: insert it in the center of a muffin, and if it comes out clean, they are ready.
  12. Remove the muffins from the oven and let them cool before serving.
