Mango and Passion Fruit Yogurt Muffins

Ingredients
- 250 grams of all-purpose flour
- 150 grams of sugar
- 2 eggs
- 125 ml of natural yogurt or mango yogurt if available
- 80 ml of vegetable oil or melted and cooled butter
- 1 packet of baking powder
- 1 ripe mango
- Pulp of 2 passion fruits (or alternatively, you can use concentrated juice)
- A pinch of salt
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix the flour with the sugar, baking powder, and a pinch of salt.
- In another bowl, whisk the eggs with the yogurt and oil (or butter).
- Dice the mango into small cubes and extract the pulp from the passion fruits.
- Mix the wet ingredients with the dry ones, taking care not to overwork the batter.
- Add the mango cubes and passion fruit pulp to the batter, distributing them evenly.
- Pour the batter into muffin cups, filling them 3/4 full.
- Bake for about 20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Let the muffins cool on a rack before serving.
