Spinach Muffins

Spinach muffins are a great way to enjoy a savory snack different from the usual or an original appetizer. Here’s how to make them:

Ingredients

  • 250 g of flour
  • 200 g of fresh or frozen spinach
  • 2 large eggs
  • 100 ml of milk
  • 80 ml of extra virgin olive oil
  • 100 g of grated cheese (Parmesan or Pecorino)
  • 1 sachet of baking powder for savory cakes
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the spinach if fresh and cook for a few minutes in a pan with a drizzle of oil or simply defrost if they are frozen. After cooking, chop them coarsely.
  3. In a bowl, beat the eggs with a pinch of salt and pepper. Add the oil and milk and continue to stir.
  4. Add the chopped spinach and grated cheese to the egg mixture. Adjust with salt and pepper and grate in some nutmeg to taste.
  5. Fold in the sifted flour and baking powder, mixing gently so as not to deflate the mixture.
  6. Butter and flour the muffin molds or use paper liners to prevent sticking.
  7. Fill them 3/4 full with the batter and bake for about 20-25 minutes or until they are golden brown and well risen.
  8. Do the toothpick test: if it comes out dry, the muffins are ready.
  9. Remove them from the oven and let them cool on a wire rack.

Serve them warm or at room temperature. They are delicious on their own, but you can also pair them with a spreadable cheese or a dab of butter.
