Spinach Muffins
17/11/2023Spinach muffins are a great way to enjoy a savory snack different from the usual or an original appetizer. Here’s how to make them:
Ingredients
- 250 g of flour
- 200 g of fresh or frozen spinach
- 2 large eggs
- 100 ml of milk
- 80 ml of extra virgin olive oil
- 100 g of grated cheese (Parmesan or Pecorino)
- 1 sachet of baking powder for savory cakes
- Salt to taste
- Pepper to taste
- Nutmeg to taste (optional)
Preparation
- Preheat the oven to 180 °C.
- Clean the spinach if fresh and cook for a few minutes in a pan with a drizzle of oil or simply defrost if they are frozen. After cooking, chop them coarsely.
- In a bowl, beat the eggs with a pinch of salt and pepper. Add the oil and milk and continue to stir.
- Add the chopped spinach and grated cheese to the egg mixture. Adjust with salt and pepper and grate in some nutmeg to taste.
- Fold in the sifted flour and baking powder, mixing gently so as not to deflate the mixture.
- Butter and flour the muffin molds or use paper liners to prevent sticking.
- Fill them 3/4 full with the batter and bake for about 20-25 minutes or until they are golden brown and well risen.
- Do the toothpick test: if it comes out dry, the muffins are ready.
- Remove them from the oven and let them cool on a wire rack.
Serve them warm or at room temperature. They are delicious on their own, but you can also pair them with a spreadable cheese or a dab of butter.
