Spelt Muffins

Ingredients
- 250 g of spelt flour
- 100 g of brown sugar
- 80 ml of seed oil
- 2 eggs
- 120 ml of milk
- 1 sachet of baking powder
- A pinch of salt
- Vanilla essence or the grated zest of 1 lemon (for flavoring)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the individual slots with paper cups.
- In a bowl, mix the spelt flour with the baking powder and a pinch of salt.
- In another bowl, beat the eggs with the sugar until you have a frothy mixture.
- Add the oil, milk, and vanilla or lemon zest to the frothy mixture, mixing well to blend the wet ingredients.
- Incorporate the dry ingredients into the wet mixture, mixing from the bottom up to avoid the formation of lumps, until a homogeneous dough is obtained.
- Pour the batter into the paper cups, filling them 2/3 full, and if desired, add fruit pieces, chocolate chips, nuts, or other ingredients of your choice on top.
- Bake in the preheated oven for about 20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool on a wire rack before serving.
