Spelt Muffins

Ingredients

  • 250 g of spelt flour
  • 100 g of brown sugar
  • 80 ml of seed oil
  • 2 eggs
  • 120 ml of milk
  • 1 sachet of baking powder
  • A pinch of salt
  • Vanilla essence or the grated zest of 1 lemon (for flavoring)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the individual slots with paper cups.
  2. In a bowl, mix the spelt flour with the baking powder and a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until you have a frothy mixture.
  4. Add the oil, milk, and vanilla or lemon zest to the frothy mixture, mixing well to blend the wet ingredients.
  5. Incorporate the dry ingredients into the wet mixture, mixing from the bottom up to avoid the formation of lumps, until a homogeneous dough is obtained.
  6. Pour the batter into the paper cups, filling them 2/3 full, and if desired, add fruit pieces, chocolate chips, nuts, or other ingredients of your choice on top.
  7. Bake in the preheated oven for about 20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
  8. Remove the muffins from the oven and let them cool on a wire rack before serving.
