Asparagus Muffins

Ingredients
- 250 g of flour
- 100 g of asparagus
- 2 eggs
- 80 ml of extra virgin olive oil
- 100 ml of milk
- 100 g of grated cheese (Parmesan or Pecorino)
- 1 packet of baking powder for savory cakes
- Salt and pepper to taste
- Butter to grease the muffin tin
Preparation
- Preheat the oven to 180 °C and grease the muffin tins with a bit of butter.
- Clean the asparagus by removing the woody ends and cutting them into small pieces (leave some tips whole if you want to decorate).
- Blanch the asparagus in salted water for 3-4 minutes, then drain and let cool.
- In a bowl, beat the eggs with a pinch of salt and pepper. Add the oil and milk, continuing to beat.
- Incorporate the sifted flour and baking powder, mixing until the dough is smooth.
- Add the grated cheese and cooked asparagus, stirring carefully to distribute them in the dough.
- Fill the muffin tins with the dough, not exceeding three-quarters full to allow space for rising.
- If you have set aside some asparagus tips, you can insert them into the center of each muffin before baking as decoration.
- Bake the muffins in the oven for about 20-25 minutes or until golden and a toothpick inserted in the center comes out clean.
- Let them cool before serving.
