Asparagus Muffins

Preparing savory asparagus muffins can be an original idea for an appetizer or brunch. Here is a recipe with an Italian touch that might suit you.

Ingredients

  • 250 g of flour
  • 100 g of asparagus
  • 2 eggs
  • 80 ml of extra virgin olive oil
  • 100 ml of milk
  • 100 g of grated cheese (Parmesan or Pecorino)
  • 1 packet of baking powder for savory cakes
  • Salt and pepper to taste
  • Butter to grease the muffin tin

Preparation

  1. Preheat the oven to 180 °C and grease the muffin tins with a bit of butter.
  2. Clean the asparagus by removing the woody ends and cutting them into small pieces (leave some tips whole if you want to decorate).
  3. Blanch the asparagus in salted water for 3-4 minutes, then drain and let cool.
  4. In a bowl, beat the eggs with a pinch of salt and pepper. Add the oil and milk, continuing to beat.
  5. Incorporate the sifted flour and baking powder, mixing until the dough is smooth.
  6. Add the grated cheese and cooked asparagus, stirring carefully to distribute them in the dough.
  7. Fill the muffin tins with the dough, not exceeding three-quarters full to allow space for rising.
  8. If you have set aside some asparagus tips, you can insert them into the center of each muffin before baking as decoration.
  9. Bake the muffins in the oven for about 20-25 minutes or until golden and a toothpick inserted in the center comes out clean.
  10. Let them cool before serving.

Curiosity

Savory muffins are a variation of the more well-known sweet muffins and lend themselves to various combinations of ingredients. Asparagus, especially in spring when they are in season, add a touch of freshness and a delicate flavor that pairs well with the intense taste of the cheese.

Happy cooking and enjoy your meal!
