Ingredients
- 250 grams of all-purpose flour
- 200 ml of whole milk
- 150 grams of granulated sugar
- 80 grams of butter
- 1 large egg
- 1 packet of baking powder (about 16 grams)
- A pinch of salt
- 1 teaspoon of vanilla extract (or the grated zest of a lemon for a more Italian touch)
Preparation
- Preheat the oven to 180 °C (356 °F) and prepare a muffin pan by lining the molds with paper cups or by buttering and flouring them.
- In a small saucepan, warm the milk with the butter until the butter has completely melted. Let it cool down.
- In a large bowl, whisk the egg with sugar until you have a frothy and light mixture. Add the vanilla extract or lemon zest.
- Sift the flour with the baking powder and a pinch of salt, then add it to the egg and sugar mixture alternating with the lukewarm milk and butter.
- Mix the ingredients with a spatula with gentle movements from the bottom up until you get a smooth and homogeneous batter.
- Fill the paper cups to about 2/3 of their capacity.
- Bake the muffins for about 20-25 minutes or until a skewer inserted in the center of a muffin comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
