Ingredients

  • 250 g of 00 flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt

  • 150 ml of milk
  • 1 egg

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by greasing it or lining it with paper liners.

  2. In a large bowl, mix the flour, baking powder, baking soda, salt, and a grind of black pepper. Also add the grated cheese and aromatic herbs if you decide to use them.

  3. In another bowl, lightly beat the egg with the milk and oil.

  4. Pour the liquid ingredients into the dry ones and mix with a spatula or a wooden spoon until just combined. Be careful not to overmix to prevent the muffins from becoming hard.

  6. Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
