Ingredients
- 200 g of all-purpose flour
- 100 g of sugar
- 100 g of grated coconut
- 1 packet of baking powder
- 2 eggs
- 125 ml of milk
- 80 ml of vegetable oil
- 1 pinch of salt
- Icing sugar for decorating (optional)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, mix together the flour, grated coconut, sugar, baking powder, and a pinch of salt.
- In another bowl, beat the eggs with the vegetable oil and milk until smooth.
- Combine the dry ingredients with the liquid mixture and stir with a spatula or wooden spoon until there are no lumps.
- Distribute the batter in the muffin cups, filling them about two-thirds full.
- Bake and cook for about 20 minutes or until the muffins are golden brown and, when a toothpick is inserted in the center, it comes out clean.
- Let the muffins cool on a rack, then sprinkle them with icing sugar if you want to add an extra sweet touch.
