Bell Pepper Muffins
17/11/2023Bell pepper muffins are a savory variant of the classic muffin and can be an excellent snack or a tasty appetizer. Here’s how to prepare them:
Ingredients
- 250 grams of flour
- 1 red bell pepper
- 1 yellow bell pepper
- 2 eggs
- 100 ml of extra virgin olive oil
- 100 ml of milk
- 1 packet of baking powder for savory dishes
- 100 grams of grated cheese (for example, parmesan or pecorino)
- Salt and pepper to taste
- Aromatic herbs to taste (basil, oregano, thyme)
- Seed oil for greasing the molds
Preparation
-
Clean the bell peppers by removing seeds and internal filaments, and cut them into small cubes.
-
Heat a drizzle of oil in a frying pan and sauté the pepper cubes for about 5 minutes or until they are slightly softened. Let them cool down.
-
Take a large bowl and beat the eggs with a whisk. Add the olive oil and continue mixing.
-
Incorporate the milk and mix until you have a homogeneous mixture.
-
Sift the flour with the baking powder and add to the liquid mixture. Stir to avoid lumps.
-
Add the cooled peppers, grated cheese, chopped aromatic herbs, salt, and pepper, and stir to distribute evenly.
-
Prepare the muffin pan by greasing the compartments with a little seed oil or use paper liners.
-
Fill them 2/3 full with the prepared batter.
-
Preheat the oven to 180 °C (356 °F) and, once hot, bake the muffins for about 20-25 minutes or until they have a golden surface and are well risen.
-
Do the toothpick test: if it comes out clean when inserted, the muffins are done.
-
Remove the muffins from the oven and let them cool on a wire rack before serving.
Trivia
Bell pepper muffins are a perfect recipe for those who love Mediterranean flavors. You can add an even more distinct Italian touch by replacing the milk with ricotta to achieve a creamier texture and richer flavor.
