Bell Pepper Muffins

Ingredients

  • 250 grams of flour
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 eggs
  • 100 ml of extra virgin olive oil
  • 100 ml of milk
  • 1 packet of baking powder for savory dishes
  • 100 grams of grated cheese (for example, parmesan or pecorino)
  • Salt and pepper to taste
  • Aromatic herbs to taste (basil, oregano, thyme)
  • Seed oil for greasing the molds

Preparation

  1. Clean the bell peppers by removing seeds and internal filaments, and cut them into small cubes.

  2. Heat a drizzle of oil in a frying pan and sauté the pepper cubes for about 5 minutes or until they are slightly softened. Let them cool down.

  3. Take a large bowl and beat the eggs with a whisk. Add the olive oil and continue mixing.

  4. Incorporate the milk and mix until you have a homogeneous mixture.

  5. Sift the flour with the baking powder and add to the liquid mixture. Stir to avoid lumps.

  6. Add the cooled peppers, grated cheese, chopped aromatic herbs, salt, and pepper, and stir to distribute evenly.

  7. Prepare the muffin pan by greasing the compartments with a little seed oil or use paper liners.

  8. Fill them 2/3 full with the prepared batter.

  9. Preheat the oven to 180 °C (356 °F) and, once hot, bake the muffins for about 20-25 minutes or until they have a golden surface and are well risen.

  10. Do the toothpick test: if it comes out clean when inserted, the muffins are done.

  11. Remove the muffins from the oven and let them cool on a wire rack before serving.
