Blueberry Muffins

Here’s a classic recipe for delicious blueberry muffins with an Italian twist.

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 100 g of soft butter
  • 2 eggs
  • 120 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • 250 g of fresh or frozen blueberries
  • The grated zest of 1 lemon (for an extra Italian aroma)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the sifted flour with the baking powder, salt, and sugar.
  3. In another bowl, beat the eggs with the milk and melted butter.
  4. Combine the liquid ingredients with the dry ones, mixing gently to not overwork the dough.
  5. Add the grated lemon zest and mix again.
  6. Lightly flour the blueberries (this helps to distribute them evenly in the dough without them sinking) and gently fold them into the batter.
  7. Fill the muffin cups, which have been previously lined with paper liners, three-quarters full.
  8. Bake for about 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let cool for a few minutes before transferring the muffins to a wire rack to cool completely.
