Berry Muffins with Crumble
17/11/2023Berry muffins with crumble are a delicious and quite simple dessert to prepare. Before starting, make sure you have all the necessary ingredients. Here’s how to proceed.
Ingredients
For the muffins:
- 250 g of all-purpose flour
- 150 g of sugar
- 100 ml of milk
- 2 eggs
- 100 ml of vegetable oil
- 1 packet of baking powder
- 1 pinch of salt
- 200 g of mixed berries (fresh or frozen)
For the crumble:
- 100 g of all-purpose flour
- 80 g of cold butter, cubed
- 50 g of brown sugar
- 1 pinch of ground cinnamon (optional)
Preparation

Prepare the crumble: in a bowl, combine the flour with the brown sugar and a pinch of cinnamon if desired. Add the cubed cold butter and work with the tips of your fingers to obtain a sandy mixture. Put the crumble in the refrigerator while you prepare the muffin batter.

Heat the oven to 180 °C and prepare a muffin tin by lining each slot with paper liners.

In a large bowl, mix the flour with the baking powder and a pinch of salt.

In another bowl, whisk the eggs with the sugar until the mixture is light and fluffy. Add the oil and milk, mixing well.

Combine the wet ingredients with the dry ingredients and gently mix everything until smooth.

Add the berries to the batter and fold them in very gently to avoid breaking them.

Fill each liner 2/3 full with the muffin batter and sprinkle the previously prepared crumble on top.

Bake the muffins for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Let the muffins cool on a rack before serving.
