Biscotti with muesli
17/11/2023Muesli biscuits are an excellent option for an energetic breakfast or a tasty snack. Here is a classic recipe with an Italian twist.
Ingredients
- 180 g of flour (whole wheat preferred for a more rustic version)
- 100 g of brown sugar
- 100 g of butter at room temperature
- 1 egg
- 1/2 teaspoon of baking powder
- 1 pinch of salt
- 1 teaspoon of vanilla extract (or vanillin)
- 200 g of muesli (preferably without added sugars)
- 50 g of chocolate chips or dried fruit of choice (optional)
Preparation
- Preheat the oven to 180 °C and prepare a baking sheet lined with parchment paper.
- In a bowl, mix the flour, baking powder, and a pinch of salt.
- In another larger bowl, cream the soft butter with the brown sugar until it’s a homogeneous mixture.
- Add the egg and vanilla extract to the butter and sugar mixture, then mix well until everything is well incorporated.
- Gradually incorporate the dry ingredients (the flour mixture) into the wet mixture and mix until a homogeneous dough is formed.
- Add the muesli to the mix and, if you wish, the chocolate chips or dried fruit.
- With your hands, form balls of dough and slightly flatten them, then place them on the baking sheet leaving some space between each one.
- Bake in the oven for about 12-15 minutes or until the biscuits are golden.
- Remove from the oven and let the biscuits cool on the rack before serving.

Muesli was created by Dr. Maximilian Bircher-Benner for his patients in a Swiss hospital in the late 1800s. It was initially intended to be a healthy food consumed as part of a balanced diet. Today it is a common ingredient for breakfasts and snacks, and in biscuits, it provides a pleasant mix of flavors and textures.
