Biscotti with muesli

Muesli biscuits are an excellent option for an energetic breakfast or a tasty snack. Here is a classic recipe with an Italian twist.

Ingredients

  • 180 g of flour (whole wheat preferred for a more rustic version)
  • 100 g of brown sugar
  • 100 g of butter at room temperature
  • 1 egg
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract (or vanillin)
  • 200 g of muesli (preferably without added sugars)
  • 50 g of chocolate chips or dried fruit of choice (optional)

Preparation

  1. Preheat the oven to 180 °C and prepare a baking sheet lined with parchment paper.
  2. In a bowl, mix the flour, baking powder, and a pinch of salt.
  3. In another larger bowl, cream the soft butter with the brown sugar until it’s a homogeneous mixture.
  4. Add the egg and vanilla extract to the butter and sugar mixture, then mix well until everything is well incorporated.
  5. Gradually incorporate the dry ingredients (the flour mixture) into the wet mixture and mix until a homogeneous dough is formed.
  6. Add the muesli to the mix and, if you wish, the chocolate chips or dried fruit.
  7. With your hands, form balls of dough and slightly flatten them, then place them on the baking sheet leaving some space between each one.
  8. Bake in the oven for about 12-15 minutes or until the biscuits are golden.
  9. Remove from the oven and let the biscuits cool on the rack before serving.

Curiosity

Muesli was created by Dr. Maximilian Bircher-Benner for his patients in a Swiss hospital in the late 1800s. It was initially intended to be a healthy food consumed as part of a balanced diet. Today it is a common ingredient for breakfasts and snacks, and in biscuits, it provides a pleasant mix of flavors and textures.

You can play with this recipe by adding other ingredients you might have at home, such as desiccated coconut, flax or chia seeds for extra fiber, or citrus zest for a fresh touch. Enjoy your cooking and have a good breakfast with your muesli biscuits!
