Mozzarella in carrozza

Mozzarella in Carrozza is a classic Italian appetizer, especially from the Campania and Lazio cuisines, consisting of slices of bread with mozzarella in the middle, breaded and then fried. Here’s how to prepare them:

Ingredients

  • 8 slices of sandwich bread (or homemade bread without crust)
  • 250 g of fiordilatte mozzarella
  • 2 eggs
  • Flour as needed
  • Breadcrumbs as needed
  • Salt
  • Oil for frying (seed or extra virgin olive oil)

Preparation

  1. Cut the mozzarella into slices at least one centimeter thick and leave them on a slanted plate or on a sheet of paper towels to lose the excess water.
  2. Dry the mozzarella with kitchen paper.
  3. Take 4 slices of bread and place a couple of slices of mozzarella on each, leaving a free edge. Cover with the other slices of bread.
  4. Press on the edges to seal the mozzarella inside well.
  5. Dip each “sandwich” first in the flour, then in the beaten egg with a pinch of salt, and finally in the breadcrumbs, making sure the breading sticks well.
  6. In a large pan, heat plenty of oil.
  7. Fry the mozzarellas in carrozza over medium-high heat until they are golden on both sides.
  8. Drain them on paper towels to remove excess oil.
  9. Serve hot.

The name “in carrozza” derives from the idea that the mozzarella is like a noblewoman traveling protected inside her “carriage,” or the breaded and fried bread.
