Ingredients

Preparation

  1. In a thick-bottomed saucepan, pour in the sugar and add the glucose and a pinch of salt.
  2. Heat over medium flame until the sugar begins to melt and caramelize. Avoid stirring with a spoon; at most tilt and rotate the saucepan to distribute the heat evenly.
  3. In the meantime, in another saucepan, heat the cream until it is lukewarm.
  4. When the sugar has reached a nice amber color, remove the saucepan from the heat and slowly add the warm cream, being careful of splashes. The mixture will begin to fizz and increase in volume.
  5. Put the saucepan back on the fire and continue to cook the mixture, stirring constantly until it reaches a temperature of about 120 °C. If you do not have a kitchen thermometer, you can test by dropping a few drops of the mixture into a glass of water: if it forms a soft but not liquid ball, it is ready.
  6. Remove from the heat and incorporate the butter, stirring until it has completely melted into the mixture.
  7. Pour the mixture onto a lightly oiled surface or a silicone mat. Allow to cool until it begins to solidify but is still moldable.
  8. Cut into small portions and, with oiled hands, form small elongated candies, wrapping them in cellophane or waxed paper for food.
