Ingredients
- 300 g of “snowflake” type pasta (or puff pastry if you can’t find the specific one)
- 150 g of mortadella sliced thin
- 100 g of unsalted pistachios
- 200 g of fresh ricotta
- Salt and pepper to taste
- Extra virgin olive oil
- 1 egg (for brushing the pastry)
Preparation
- Start by lightly toasting the pistachios in a non-stick pan for 2-3 minutes. Let them cool and then finely chop them.
- In a bowl, mix the ricotta with the chopped pistachios, a pinch of salt, and pepper to taste.
- Roll out the snowflake pasta on a lightly floured work surface. If you are using puff pastry, cut it into squares of about 10 cm on each side.
- Take a slice of mortadella and cut it to the same size as the pasta.
- Place a teaspoon of the ricotta and pistachios filling in the center of each square of pastry, and cover with the slice of mortadella.
- Close the pastry forming a triangle, or seal it well on the sides if you are using the snowflake shape, pressing the edges to seal the filling.
- Beat the egg in a small bowl and brush each puff with it.
- Preheat the oven to 200 °C and arrange the puffs on a baking tray lined with parchment paper.
- Bake the snowflake puffs for about 15-20 minutes or until the pastry is golden and crispy.
- Let cool for a few minutes before serving.
