Mojito Mousse

Mojito mousse is a dessert inspired by the classic Cuban cocktail, but prepared in a sweet and non-alcoholic version so that everyone can enjoy it. Here’s the recipe with an Italian twist:

Ingredients

  • 250 ml of fresh cream to whip
  • 3 egg yolks
  • 80 g of granulated sugar
  • 8 g of gelatin sheets (fish glue)
  • Juice and zest of 1 lime
  • A handful of fresh mint leaves
  • A small amount of dark chocolate (for decoration, optional)
  • Water as needed for the gelatin

Preparation

  1. Start by hydrating the gelatin sheets in cold water for about 10 minutes.
  2. Meanwhile, in a large bowl, whisk the egg yolks with the sugar until you get a frothy and light mixture.
  3. Heat the lime juice in a small saucepan and, once warm, squeeze out the hydrated gelatin well and dissolve it in the lime juice off the heat.
  4. Pour the lime and gelatin mixture into the whipped yolks, mixing gently until everything is evenly combined.
  5. Finely chop the fresh mint leaves and add them to the cream.
  6. In another bowl, whip the fresh cream until it’s frothy but not too stiff.
  7. Gently fold the whipped cream into the cream of egg yolks, sugar, lime, and mint, trying to keep the mixture as airy as possible.
  8. Pour the mousse into glasses or cups and let it rest in the refrigerator for at least 3 hours.
  9. Before serving, decorate with flakes of dark chocolate and a mint leaf for an elegant finish.

The mojito, from which this dessert takes its inspiration, is a cocktail made with rum, sugar, lime, mint, and sparkling water. Traditionally, it is a very popular aperitif for its freshness and balanced taste. The mousse version retains the aromatic characteristics of the mojito, transforming them into a light and fragrant dessert.

If you want an additional touch of flavor, you could add a tablespoon of white rum to the mixture if there is no problem consuming alcohol. Alternatively, to emulate the flavor, use a non-alcoholic rum extract.
