Curiosity

“Gratin” refers to a French cooking technique that involves covering food with a crispy crust, often made of breadcrumbs and cheese, and then grilling or baking it to gratinate. It is a method much appreciated in Italy for the preparation of seafood, as it gives the dish a pleasant crispy texture that contrasts with the softness of the marine ingredients.
