Mixed Fry of Vegetables and Cheeses

Ingredients

  • Assortment of fresh vegetables (for example, zucchini, eggplants, peppers, artichokes) cut into sticks or slices
  • Soft or semi-soft cheeses that are suitable for frying (such as mozzarella, scamorza, brie or camembert) cut into pieces or slices
  • Flour as needed (preferably type 00)
  • 2-3 beaten eggs
  • Breadcrumbs as needed
  • Salt and pepper as needed
  • Oil for frying (vegetable or extra virgin olive, depending on taste)

Preparation

  1. Start by preparing the vegetables and cheeses: wash and cut them as indicated in the ingredients.
  2. Heat a generous amount of oil in a frying pan or deep fryer.
  3. Prepare three containers: one with flour, one with the beaten and seasoned eggs, and one with breadcrumbs.
  4. Lightly flour the vegetables and cheeses, dip them in the egg and then in the breadcrumbs.
  5. Fry the breaded vegetables and cheeses in hot oil (180 °C) until they are golden and crispy. You can fry a few pieces at a time to avoid lowering the oil temperature too much.
  6. As they are ready, transfer them onto paper towels to remove any excess oil.
  7. Arrange the mixed fry on a serving plate, adjust for salt if necessary, and serve immediately.

This type of frying is very common in other countries with variations on the ingredients, for example in Japan you would find tempura, a very light frying; in Italy, however, it is classic to use a well-defined breading to give crispness.
