Mint Naked Cake

The Mint Naked Cake is characterized by its “naked” aesthetic, meaning it has little or no outer frosting, revealing the layers and fillings. Here is a basic version with Italian touches, such as the use of mascarpone in the filling. Make sure you have all the ingredients before starting.

Ingredients

For the cakes:

  • 300 g of sugar
  • 300 g of soft butter
  • 6 large eggs
  • 300 g of self-raising flour
  • A pinch of salt
  • Mint extract (to taste)

For the filling and topping:

  • 500 g of mascarpone
  • 200 ml of whipping cream
  • Powdered sugar (to taste)
  • Dark chocolate chips
  • Fresh mint leaves for decorating

Preparation

  1. Prepare the cakes: Preheat the oven to 180 °C. Grease and flour three cake tins with a diameter of about 20 cm.

  2. In a large bowl, cream the butter with the sugar until light and fluffy. Add the eggs, one at a time, making sure each is fully incorporated before adding the next.

  3. Gently fold in the sifted flour with the salt, mixing until you have a smooth batter. Finally, stir in the mint extract according to your preference for intensity.

  4. Divide the batter evenly between the prepared tins and level it with a spatula. Bake in the oven for about 25 minutes or until a skewer inserted in the center comes out clean. Allow to cool completely.

  5. Prepare the filling: In a bowl, whip the cream, then fold it gently into the mascarpone. Add the powdered sugar and mix until you obtain a smooth and spreadable cream.

  6. Assemble the cake: Place the first cake layer on a serving plate and spread a generous amount of mascarpone cream over it. Sprinkle with dark chocolate chips.

  7. Repeat the process with the remaining cake layers. Once stacked, use the remaining cream to spread a thin layer around the entire perimeter of the cake, allowing the inner layers to show.

  8. Decorate the top with fresh mint leaves and some chocolate chips.

Remember that the Mint Naked Cake is versatile, and you can customize it with different types of fillings, such as chocolate or lemon cream. You can also add a little color to the filling with a few drops of green food coloring to highlight the mint flavor.
