Mint Cake

Ingredients

  • 200 g of sugar
  • 200 g of butter at room temperature
  • 4 eggs
  • 240 g of all-purpose flour
  • 1 packet of baking powder
  • A pinch of salt
  • 120 ml of milk
  • 2 tablespoons of mint extract (or mint syrup)
  • A few drops of green food coloring (optional)
  • Chocolate chips (optional)

For the icing:

  • 200 g of powdered sugar
  • 2-3 tablespoons of milk
  • 1 tablespoon of mint extract
  • A few drops of green food coloring (optional)

Preparation

  1. Start by preheating the oven to 180 °C and greasing a round cake pan.
  2. In a bowl, cream the butter with the sugar until fluffy and light.
  3. Add the eggs one at a time, making sure to mix well after each addition.
  4. Slowly fold in the sifted flour with the baking powder and salt, alternating with the milk.
  5. Add the mint extract and mix until it’s evenly distributed. If you wish, you can add food coloring to achieve a green color.
  6. At this point, if you want, you can also add the chocolate chips, which traditionally pair very well with mint.
  7. Pour the mixture into the pan and bake for about 35-40 minutes or until a skewer inserted into the center of the cake comes out clean.
  8. Once ready, let the cake cool completely before proceeding with the icing.
  9. For the icing: in a bowl mix the powdered sugar with the mint extract and milk, a few tablespoons at a time, until you achieve a smooth and spreadable consistency. If desired, add green coloring.
  10. Spread the icing on the cooled cake and let it set before serving.
