Mint Chocolate Ice Cream

Mint ice cream with chocolate chips is a delicious classic, and here’s how to make it. Please note: ideally, making ice cream requires an ice cream maker, but if you don’t have one, I’ll give you an alternative to make it without one.

Ingredients

  • 500 ml of whole milk
  • 250 ml of fresh cream
  • 150 g of sugar
  • 4 egg yolks
  • A bunch of fresh mint leaves (about 10-15 leaves) or, alternatively, a few drops of natural mint essence
  • 100 g of dark chocolate, in flakes or coarsely chopped

Preparation

  1. In a saucepan, over medium-low heat, warm milk with the fresh mint until it almost boils. Remove from heat and let the mint leaves infuse for about 30 minutes, then strain to remove the leaves.
  2. In a bowl, beat the yolks with the sugar until you get a light and frothy mixture.
  3. Put the flavored milk back on the heat and when it is warm, slowly blend it into the yolk and sugar mixture, stirring continuously.
  4. Put everything back on low heat and cook the cream until it coats the back of a spoon (internal temperature about 82°C), making sure to stir constantly and not let it boil.
  5. Remove the cream from heat and allow it to cool completely, preferably in an ice bath to speed up the process.
  6. Once cool, add the fresh cream to the mint milk mixture.
  7. If you have an ice cream maker, pour the mixture into it and follow the instructions to freeze the ice cream.
  8. If you don’t have an ice cream maker, pour the mixture into a container suitable for freezing and put it in the freezer. For the first 2-3 hours, every 30 minutes, stir the ice cream with a fork to break any ice crystals that may be forming.
  9. When the ice cream is almost completely hard, add the chocolate flakes, stirring well to distribute them evenly.
  10. Leave the ice cream in the freezer until it reaches the desired consistency.

Curiosity

In Italy, mint ice cream with chocolate chips is also known as “stracciatella di menta.” Generally, stracciatella is an Italian ice cream flavor featuring a fiordilatte (sweet milk) ice cream base with dark chocolate flakes. The addition of mint makes this version particularly refreshing and suitable for the summer.
