Mini Savory Puff Pastries ("Angeliche Salate")
17/11/2023We can create a savory variant of the “angeliche” puff pastries. Angeliche are usually sweet leavened desserts, but we can adapt them into a savory and simpler version using ready-made puff pastry. Here’s how to prepare Mini Savory Puff Pastries (“Angeliche Salate”).
Ingredients
- 1 rectangular puff pastry roll
- 100 g of cooked ham, thinly sliced
- 100 g of soft cheese (such as stracchino or robiola)
- 1 egg for brushing
- Sesame or poppy seeds for decoration (optional)
- Salt and pepper to taste
Preparation
- Preheat the oven to 200 °C.
- Unroll the puff pastry and evenly spread the soft cheese on the surface, leaving about a 1 cm border clear.
- Lay the cooked ham on top, covering the cheese. Add a pinch of salt and pepper to taste.
- Roll up the puff pastry on itself starting from the longer side, forming a cylinder.
- Cut the cylinder into slices about 2 cm thick.
- Place the slices on a baking tray lined with parchment paper, making sure they don’t touch each other.
- Beat the egg in a small bowl and use it to brush the surfaces of the “angeliche”.
- If you wish, sprinkle the “angeliche” with sesame or poppy seeds for extra crunchiness and presentation.
- Bake for about 15-20 minutes or until the “angeliche” are golden brown and well puffed up.
- Remove from the oven and let them cool on a wire rack before serving.
Mini Savory Puff Pastries (“Angeliche Salate”) are perfect as an appetizer or for an aperitif. If you like, you can vary the filling using other types of cold cuts or by adding grilled vegetables, pesto, or olives to suit your tastes.
