Ingredients
- Mini panettoni (ready-made, one for each guest)
- 250 ml of heavy cream for whipping
- 1 teaspoon of powdered sugar
- 200 g of custard (you can buy it ready-made or make it at home)
- Fresh fruit of your choice (strawberries, kiwi, peaches, etc.), washed and cut
- Chocolate chips or shavings, to decorate (optional)
Preparation
- Start by preparing the custard if you do not have it ready. If you prefer to buy it, make sure it’s of good quality and fresh.
- For homemade custard, heat a small pot with 500 ml of milk and the zest of one lemon on the stove. In a bowl, whisk 4 egg yolks with 100 g of sugar until frothy. Add 40 g of sifted flour and continue to stir until the lumps are gone. When the milk is warm, remove from the heat, take out the lemon zest, and pour the warm milk into the yolk mixture, stirring rapidly to avoid cooking the eggs.
- Return the mixture to the pot and cook over medium heat, stirring constantly until the cream thickens. Once ready, cover the surface of the custard with plastic wrap to prevent a skin from forming and let cool.
- Whip the well-chilled cream with the powdered sugar until it is firm and fluffy.
- Cut the top off of the mini panettoni and set it aside. With a spoon, remove some of the interior to create a space for the filling.
- Alternating layers, place a spoonful of custard and a layer of whipped cream inside each panettone. Add pieces of fresh fruit between the layers according to your taste.
- Gently place the top of the panettone back on top of the filling.
- Decorate the top with a little whipped cream and add fruit of your choice and, if desired, the chocolate chips or shavings.
- Let the filled panettoni rest in the fridge for about an hour before serving.
