Mini Fried Bomboloni with Sugar

Mini bomboloni are a delight to serve as a sweet snack or for a special breakfast. Here is the recipe:

Ingredients

  • 250 g of “00” flour
  • 30 g of sugar
  • 10 g of fresh brewer’s yeast (or 3 g of dehydrated brewer’s yeast)
  • 1 whole egg
  • 60 ml of lukewarm milk
  • 30 g of soft butter
  • A pinch of salt
  • Zest of 1 lemon (optional)
  • Oil for frying
  • Granulated sugar, for garnishing

Preparation

  1. Dissolve the yeast in warm milk with a teaspoon of sugar taken from the total amount, and let it activate for about 10 minutes.
  2. In a large bowl, sift the flour and add the salt, the remaining sugar, and grated lemon zest if you wish to give a citrus aroma.
  3. Add the egg and the activated yeast, and begin to knead until a homogeneous mixture is obtained.
  4. Add the soft butter in pieces and continue to knead until the butter is completely absorbed into the dough.
  5. Transfer the dough onto a floured surface and work it until it becomes smooth and elastic.
  6. Place the dough in a lightly greased bowl and cover with a damp cloth; let it rise in a warm place until it doubles in volume, about 1-2 hours.
  7. After rising, deflate the dough and roll it out with a rolling pin to a thickness of about 1 cm.
  8. Cut out discs with a round cookie cutter about 4-5 cm in diameter.
  9. Arrange the discs on a floured tray and cover them with a cloth, letting them rise for another 30 minutes.
  10. Meanwhile, heat plenty of oil in a pan with high sides until it reaches a temperature of 170-180 °C.
  11. Fry the bomboloni a few at a time, turning them once they are golden on one side, until they become puffed and evenly golden.
  12. Drain them with a slotted spoon and while still hot, roll them in granulated sugar, making sure they are completely coated.
  13. Serve the mini bomboloni hot or warm, to best appreciate their soft texture and flavor.
