Mini apple pie
17/11/2023Preparing mini apple pies can be a delightful way to enjoy the classic taste of apple pies in an individual serving. Here is the recipe to create delicious mini apple pies, perfect for a dessert after dinner or as a snack.
Ingredients
- 300g of flour
- 150g of cold butter, cubed
- 50g of sugar
- 1 egg
- 1 pinch of salt
- 4 apples (preferably a tart variety such as Granny Smith)
- 1 tablespoon of lemon juice
- 2 tablespoons of brown sugar
- ½ teaspoon of ground cinnamon
- A pinch of nutmeg
- 1 tablespoon of flour
- Beaten egg for brushing
- Granulated sugar for sprinkling

For the shortcrust pastry, mix the flour, sugar, and salt in a bowl. Add the butter and work it with the tips of your fingers until you get a sandy mixture. Add the egg and mix until a smooth dough forms. Wrap in cling film and let it rest in the fridge for at least 30 minutes.

Meanwhile, peel and chop the apples into small cubes. In a pan, cook the apples with lemon juice, brown sugar, cinnamon, and a pinch of nutmeg for about 5-8 minutes or until the apples are just soft. Add a tablespoon of flour to thicken the juice released by the apples and let the mixture cool.

Preheat the oven to 180°C.

Roll out the shortcrust pastry to a thickness of about 3mm. Cut out discs of pastry to line muffin tins or mini pie molds. Line the molds with the pastry and fill each one with the cooled apple mixture.

With the remaining pastry, cut strips or discs to create a “lid” for your mini pies. If you’re using strips, weave them to form a lattice.

Brush with beaten egg and sprinkle with granulated sugar.

Bake for about 20-25 minutes or until the pastry is golden.

Allow to cool slightly before serving.
