Mimosa Tagliatelle

Mimosa Tagliatelle is a colorful and tasty dish that is perfect for celebrating International Women’s Day, thanks to its mimosa flower-like yellow color. Here is the recipe:

Ingredients

  • 320 g of egg tagliatelle
  • 4 eggs
  • 200 ml of cooking cream
  • 150 g of chopped cooked ham
  • 100 g of grated Parmesan cheese
  • Some chives for garnish
  • Butter to taste
  • Salt and pepper to taste

Preparation

  1. Bring a large pot of salted water to a boil for cooking the tagliatelle.
  2. In the meantime, in a bowl, beat together the eggs, cream, Parmesan cheese, salt, and pepper until you have a smooth mixture.
  3. In a large frying pan, melt a knob of butter and briefly sauté the chopped ham.
  4. Drain the tagliatelle al dente and transfer them to the pan with the ham, then pour over the egg and cream mixture.
  5. Cook over low heat for a few minutes, stirring gently, until the sauce thickens and coats the pasta well.
  6. Serve the mimosa tagliatelle immediately, garnished with chopped chives to enhance the “mimosa” effect.
