Mimosa Cupcakes with Fruit
17/11/2023The fruit mimosa cupcake is a delicious variation of the classic mimosa dessert, typically prepared to celebrate International Women’s Day. Here’s how to prepare these small and delightful sweets:
Ingredients
- 160 g of all-purpose flour
- 150 g of sugar
- 120 g of soft butter
- 3 eggs
- 1 packet of baking powder
- 120 ml of milk
- Grated zest of 1 lemon
- Fresh fruit to taste (for example: strawberries, kiwi, peaches)
- 250 g of whipping cream
- 2 tablespoons of icing sugar
- 1 tablespoon of limoncello (optional)
- Whipped cream and fresh fruit for decorating
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, cream the soft butter with the sugar until the mixture is creamy.
- Add the eggs one at a time, continuing to mix.
- Incorporate the grated lemon zest and milk, and mix well.
- Gradually add the flour sifted with baking powder, and mix until the batter is smooth.
- Fill the cupcake molds 2/3 full with the batter and bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, allow the cupcakes to cool on a wire rack for pastries.
- In the meantime, cut the fruit into small pieces and, if you wish, season with a tablespoon of limoncello.
- Whip the cream with the icing sugar until it is firm and frothy.
- When the cupcakes are cool, cut a cap from the top of each and hollow out the center slightly.
- Fill the center of each cupcake with the cut fruit and cover with a bit of whipped cream.
- Cut the caps into small pieces and use them to decorate the surface of the cupcakes, sticking them to the cream to create the “mimosa” effect.
- Decorate further with fresh fruit and, if you wish, a dusting of icing sugar before serving.
