Mimosa Cupcake
17/11/2023Mimosa cupcakes are a miniature version of the classic mimosa cake and represent a cute and delicious idea to celebrate special occasions like International Women’s Day. Here’s how to make them:
Ingredients
- 125 g of all-purpose flour
- 125 g of sugar
- 125 g of soft butter
- 2 eggs
- 1/2 sachet of baking powder
- 1 pinch of salt
- Grated zest of 1 lemon (optional)
- 200 ml of fresh cream for the filling
- 2 tablespoons of powdered sugar for the cream
- 125 ml of milk
- Alchermes liqueur or orange juice for soaking (optional)
For the decoration:
- 100 g of sponge cake
- Powdered sugar as needed
Preparation
- Preheat the oven to 180 °C.
- In a bowl, cream the soft butter with the sugar until you have a soft and fluffy mixture.
- Add the eggs one at a time, continuing to beat.
- Gently fold in the sifted flour, baking powder, and salt, mixing gently until the batter is smooth. If you like, add the grated lemon zest.
- Fill the cupcake liners to about 2/3 of their capacity and bake for about 20 minutes or until they are golden brown and well risen.
- Meanwhile, whip the cream with the powdered sugar until it is firm and put it in the fridge.
- Once baked, remove the cupcakes from the oven and allow them to cool completely.
- When they are cool, cut a small lid from the top of each cupcake and hollow out the inside to make room for the cream.
- If desired, soak the center of the cupcakes with alchermes or orange juice.
- Fill the hollow with whipped cream and replace the cupcake lid.
For the decoration:
- Crumble the sponge cake and pass it through a sieve to obtain fine crumbs.
- Sprinkle the sponge cake crumbs over the cupcakes, trying to get them to adhere well to the cream to simulate the appearance of the mimosa.
- Finally, dust with powdered sugar.
Your mimosa cupcakes are ready! They are perfect to serve for a spring snack or as a sweet tribute to International Women’s Day.
