Mimosa chicken

Mimosa chicken is a creative dish that is well-suited for special occasions; its name comes from its resemblance to the yellow mimosa flowers, often used to celebrate International Women’s Day in Italy. Here is the recipe:

Ingredients

  • 4 chicken breasts
  • 4 eggs
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of mustard
  • Salt and pepper to taste
  • Chives to garnish
  • Extra virgin olive oil

Preparation

  1. Start by boiling the eggs in salted water for 9-10 minutes from when they start to boil. Once cooked, cool them under running water and peel them.
  2. Cook the chicken breasts. You can choose to steam, pan-fry with a drizzle of olive oil, or bake them. Season the chicken breasts with salt and pepper to taste.
  3. Once the chicken breasts are cooked, let them cool and then cut them into cubes or thin slices, as per your preference.
  4. Cut the hard-boiled eggs in half and separate the yolks from the whites.
  5. Mash the yolks with a fork and mix them with mayonnaise and mustard until you have a smooth cream.
  6. Chop the egg whites into very small pieces or finely chop them.
  7. Spread the cut chicken on a serving dish creating an even layer.
  8. Spread the egg yolk, mayonnaise, and mustard cream on top.
  9. Finally sprinkle with the chopped egg whites, making sure to cover the surface evenly.
  10. Garnish with chopped chives and serve chilled.
