Millet Balls without Bread and Eggs

Here is a recipe for making millet balls without bread and eggs, a light dish suitable for those following a vegan diet or for those who are intolerant to these ingredients.

Ingredients

  • 200 g of millet
  • 400 ml of vegetable stock or water
  • 1 small onion finely chopped
  • 1 grated carrot
  • 2 tablespoons of chickpea flour (or other vegetable binder)
  • 1 tablespoon of ground flaxseeds (optional, as an egg substitute)
  • 2 tablespoons of chopped fresh parsley
  • Salt and pepper to taste
  • Extra virgin olive oil for cooking

Preparation

  1. First, rinse the millet thoroughly under running water to remove any residue.
  2. In a pot, bring the vegetable stock or water to a boil and add the millet. Lower the heat and let it cook for about 15-20 minutes, or until the millet has absorbed all the liquid and is soft. Turn off the heat and let it cool down.
  3. In a non-stick pan, sauté the chopped onion with a little oil until it becomes translucent. Add the grated carrot and cook for a few minutes.
  4. In a bowl, mix the cooked millet with the onion and carrot sauté, the chopped parsley, chickpea flour, and ground flaxseeds. Adjust with salt and pepper. If the mixture is too dry, you can add a little water to better bind the balls.
  5. Form small balls with the millet mixture and lightly coat them in chickpea flour to create a crust during cooking.
  6. Heat a little oil in a pan and cook the millet balls over medium-low heat until they have a nice golden crust on all sides.
  7. Serve your hot millet balls with fresh tomato sauce or a vegan yogurt sauce.
