Millet Focaccia

Millet focaccia is a variant of the classic focaccia that includes millet among its ingredients, making it particularly nutritious. Here is the recipe:

Ingredients

  • 250 g of millet flour
  • 250 g of wheat flour type 0 or type 1
  • 300 ml of lukewarm water
  • 12 g of fresh baker’s yeast (or 4 g of dry baker’s yeast)
  • 1 teaspoon of sugar
  • 2 teaspoons of salt
  • 30 ml of extra virgin olive oil, plus a little to grease
  • Fresh rosemary (optional)
  • Coarse salt for garnish

Preparation

  1. In a large bowl, dissolve the fresh (or dry) baker’s yeast in lukewarm water with a teaspoon of sugar. Let it rest for a few minutes until bubbles start to form on the surface, indicating that the yeast is active.
  2. In another bowl, mix millet flour and wheat flour, add salt and mix.
  3. Make a well in the center of the flour mixture and pour in the water with the yeast. Start kneading, adding the extra virgin olive oil. Work the dough for about 10 minutes until it is smooth and elastic.
  4. Grease a bowl with a drizzle of olive oil, place the dough in it and cover with a damp cloth. Let it rise in a warm place away from drafts for about 2 hours or until the dough has doubled in size.
  5. Transfer the dough to an oiled baking sheet, spreading it evenly with your fingers to form the classic dimples of focaccia.
  6. Let the focaccia rise on the tray for another 30 minutes.
  7. Meanwhile, preheat the oven to 220 °C (428 °F).
  8. Before baking, add the broken-up fresh rosemary and sprinkle the surface with coarse salt. Drizzle with a stream of extra virgin olive oil.
  9. Bake the focaccia for about 20-25 minutes or until it is golden brown on top.
  10. Remove the focaccia from the oven and let it cool on a wire rack before serving.
