Milk Croquettes

Milk croquettes are a very tasty traditional appetizer. Here is how to prepare them:

Ingredients

  • 500 ml of milk
  • 80 g of butter
  • 100 g of flour 00
  • Grated nutmeg to taste
  • 2 egg yolks
  • 100 g of grated Parmesan cheese
  • Salt and pepper to taste
  • For breading:
    • Flour as needed
    • 2 eggs
    • Breadcrumbs as needed
  • Oil for frying

Preparation

  1. In a saucepan, heat the milk with a pinch of salt and a dash of nutmeg.
  2. In another saucepan, melt the butter and add the flour, stirring vigorously to avoid lumps. Cook for a few minutes until it turns golden.
  3. Pour the hot milk into the roux (the butter and flour mixture) a little at a time, continuing to stir until the mixture becomes smooth and thick.
  4. With the heat off, add the egg yolks one at a time and the grated Parmesan, mixing well. Adjust salt and pepper to taste.
  5. Transfer the mixture into a tray, cover it with cling film in contact and let it cool in the refrigerator for at least 3 hours.
  6. Once firm, use two teaspoons or damp hands to form the croquettes.
  7. First, coat them in flour, then dipped in beaten egg, and finally in breadcrumbs.
  8. Fry the croquettes in plenty of hot oil until they are golden and crispy. Drain them on paper towels to remove excess oil.
  9. Serve the hot milk croquettes.
