Asparagus Milanese Style

Ingredients

  • 1 bunch of fresh asparagus
  • 2-3 eggs
  • 50-60 grams of butter
  • Grated Parmesan cheese to taste
  • Salt to taste
  • Black pepper to taste

Preparation

  1. Start by cleaning the asparagus: remove the woody part of the stem and wash the asparagus under running water. One method to identify the part to be removed is to bend the asparagus until it naturally breaks.
  2. Bring a pot of salted water to a boil and cook the asparagus for about 5-8 minutes, depending on their thickness, until they are tender but still crisp.
  3. In the meantime, melt the butter in a pan until it begins to take on a light hazelnut color. Be careful not to burn it.
  4. In a second pan, cook the eggs sunny-side up: crack the eggs into a non-stick pan with a bit of hot butter, letting them slide gently to keep the yolks whole.
  5. Drain the asparagus and lay them on a serving plate. Pour the hot melted butter over them.
  6. Now place the sunny-side up eggs on top of the asparagus and sprinkle generously with grated Parmesan cheese.
  7. Add a pinch of black pepper and serve immediately.
