Risotto alla milanese in jar cooking
17/11/2023The risotto alla milanese in jar cooking is a modern variant of the classical dish from Lombardy, suitable for those who love the convenience of microwave cooking. Here is the recipe:
Ingredients
- 200 g of Carnaroli or Arborio rice
- 750 ml of hot meat broth
- 1 sachet of saffron
- 1/2 finely chopped onion
- 50 g of butter
- 50 g of grated Parmesan cheese
- Salt and pepper to taste
- 1/2 glass of white wine (optional)
Preparation
- In a jar that can be sealed and is suitable for microwave cooking, sauté the onion with a portion of the butter. To do this, seal the jar and place it in the microwave for about 2 minutes at 750 watts.
- Add the white wine to the jar, seal it, and cook for another 1-2 minutes to allow the alcohol to evaporate.
- Add the rice to the jar, stir well to lightly toast it with the sautéed mixture. Cook in the microwave for 1 minute at 750 watts without sealing the jar.
- Dissolve the saffron sachet in a little hot broth and pour the mixture into the jar along with the rest of the broth. Stir well, seal the container, and cook in the microwave at 750 watts for about 16-18 minutes. Check the cooking occasionally and stir if necessary.
- Once the rice is al dente, remove the jar from the microwave (be careful, it will be very hot - use oven gloves or a potholder), open the seal and cream the risotto by adding the remaining butter and Parmesan cheese. Season with salt and pepper.
- Let the risotto rest for about 1 minute with the lid on, then serve hot.
Notes
- The cooking time may vary depending on the microwave, so keep an eye on the risotto, especially the first time you try this recipe.
- Jar cooking is a microwave cooking method that retains flavors and allows for healthier cooking by limiting the use of fats.
This modern cooking method is a nice compromise between the tradition of the dish and the needs for speed and practicality of contemporary cooking. Remember that traditional risotto requires vigorous creaming off the heat to achieve that characteristic creaminess, while with jar cooking the result will be slightly different, but still very tasty!
