Plum Meringue Tart

The plum meringue tart is an exquisite dessert that combines the sweetness of plums with the lightness of meringue. Here is the recipe.

Ingredients

  • Shortcrust pastry:

    • 300g of 00 flour
    • 150g of cold butter, cubed
    • 120g of icing sugar
    • 1 large egg
    • 1 egg yolk
    • Grated zest of 1 lemon
    • A pinch of salt
  • Plum filling:

    • 500g of plums (both fresh and syrup-preserved are fine)
    • 2 tablespoons of sugar
    • 1 tablespoon of lemon juice
    • 1 vanilla pod (or vanilla extract)
  • Meringue:

    • 3 egg whites
    • 150g of sugar
    • 1 pinch of salt

Preparazione

  1. Start with the shortcrust pastry, mixing the flour with butter until you get a sandy mixture. Add the icing sugar, egg and yolk, lemon zest, and salt. Knead until you get a smooth dough.
  2. Wrap the dough in plastic wrap and let it rest in the fridge for at least 30 minutes.
  3. Meanwhile, clean the plums by removing the pits and cutting them into pieces. Put them in a pot with sugar, lemon juice, and the vanilla seeds (or extract), and cook over medium heat for about 10 minutes until the plums are soft and the liquid has reduced slightly.
  4. Roll out the pastry into a thin layer and line a previously buttered and floured tart pan. Prick the bottom with a fork and pour in the plum filling.
  5. Bake in a preheated oven at 180°C for about 20 minutes.
  6. For the meringue, whip the egg whites with a pinch of salt until foamy, then gradually add the sugar, continuing to whip until you get a shiny and firm mixture.
  7. Take the tart out of the oven, spread the meringue on top of the plums, and create small peaks with a spatula.
  8. Put the tart back in the oven and bake for another 10-15 minutes or until the meringue has taken on a golden color.
  9. Let it cool before serving.
