Meringue coffee

Meringue coffee is a delightful spoon dessert that combines the richness of coffee with the lightness of Italian meringue. Here is how to prepare it:

Ingredients

  • 2 small cups of sweetened espresso coffee, to taste
  • 3 egg whites
  • 150 g of caster sugar
  • 1 pinch of salt
  • Unsweetened cocoa powder for decorating

Preparation

  1. Start by preparing the Italian meringues. Whip the egg whites with a pinch of salt using an electric whisk or a mixer. When they start to foam, begin adding the caster sugar a little at a time, continuing to whip until you get a shiny, swollen, and very firm mixture.

  2. Preheat the oven to 90 °C. Line a baking tray with parchment paper.

  3. Transfer the meringue to a piping bag with a smooth nozzle and form small tufts on the tray, leaving a little space between them.

  4. Bake in the oven for about 1 hour and 30 minutes. The meringues should dry out and not change color. Once ready, turn off the oven and let them cool completely with the door open.

  5. In the meantime, prepare the espresso, sweeten to taste, and let it cool.

  6. To assemble the meringue coffee, arrange some meringues at the bottom of a dessert cup or a wide glass. Moisten the meringues with the cold coffee so that they soak slightly.

  7. If you wish, you can add whipped cream or some custard to make the dessert even richer.

  8. Decorate with a sprinkling of unsweetened cocoa powder before serving.
