Melting Potato and Sausage Flan

Ingredients

  • 800 g of potatoes
  • 250 g of fresh sausage
  • 200 g of mozzarella (buffalo mozzarella is better)
  • 50 g of grated Parmesan
  • 2 eggs
  • 100 ml of milk
  • Salt and pepper to taste
  • Nutmeg to taste
  • Butter for greasing the baking dish
  • Breadcrumbs to taste

Preparation

  1. Start by peeling the potatoes, cut them into cubes, and cook them in salted water until they are soft.

  2. Meanwhile, remove the casing from the sausage and crumble it. Sauté the sausage in a non-stick pan until it is well browned. There is no need to add oil since the sausage will release its own fat. Drain it and set it aside.

  3. Once the potatoes are cooked, drain them and mash them with a potato masher or a fork until you get a puree. Add hot milk to make the puree creamier.

  4. Add the eggs to the potato puree, then the grated Parmesan, a grating of nutmeg, and adjust with salt and pepper. Mix well to obtain a homogeneous mixture.

  5. Cut the mozzarella into cubes and let it drain to remove excess liquid.

  6. Take a baking dish, grease it with some butter, and sprinkle with breadcrumbs.

  7. Pour half of the potato puree into the baking dish, spread the browned sausage and diced mozzarella over it, then cover with the remaining puree.

  8. Level the surface, sprinkle with more grated Parmesan, and add a few flakes of butter.

  9. Bake in a preheated oven at 200 °C for about 20-30 minutes, until the surface is golden and crisp.

  10. Let the flan rest a few minutes before serving.
