Cantaloupe Mousse

Cantaloupe mousse is a fresh and delicate dessert, perfect for the summer. Here is the Italian recipe to prepare a delicious cantaloupe mousse.

Ingredients

  • 250g of cantaloupe pulp (choose a ripe and fragrant melon, like Cantaloupe or Galia)
  • 100g of powdered sugar
  • 200ml of fresh cream to whip
  • 3 sheets of gelatin (or agar agar if you prefer a vegetarian option)
  • Juice of 1/2 lemon

Preparation

  1. Begin by soaking the gelatin sheets in cold water for 10 minutes, until they become soft.
  2. Cut the melon in half, remove the seeds, and scoop out the pulp. Blend the pulp in a mixer adding the lemon juice until it becomes a homogeneous mixture.
  3. In a small saucepan, heat a small part of the melon blend (it should be warm, not boiling). Squeeze the softened gelatin sheets well and add them to the saucepan with the warm blend, stirring until completely dissolved.
  4. Transfer the melon and gelatin mixture into the remaining blend, add the powdered sugar, and mix well.
  5. In a separate bowl, whip the fresh cream until it is quite firm.
  6. Gently fold the whipped cream into the melon mixture, being careful not to deflate it, using a bottom-up motion.
  7. Pour the obtained mousse into small cups or a mold and let it rest in the refrigerator for at least 3-4 hours.
  8. Before serving, garnish with pieces of melon or fresh mint for a touch of color and freshness.
