Melon, Feta, and Arugula Skewers

Melon, feta, and arugula skewers are a delicious summer appetizer, light and fresh. Here’s a simple and quick recipe.

Ingredients

  • Melon (Cantaloupe or a similar sweet and juicy variety)
  • Feta (Greek feta is usually used)
  • Arugula
  • Black olives (if you like)
  • Fresh mint (optional, for garnish)
  • Extra virgin olive oil
  • Balsamic vinegar (optional, for the dressing)
  • Salt and pepper

Preparation

  1. Start by cutting the melon in half, remove the seeds and skin, and then cut it into cubes of about 2 cm.
  2. Cut the feta into cubes of the same size as the melon pieces.
  3. Wash the arugula and dry it well.
  4. If you choose to include olives, you can pit them and cut into small pieces or use them whole.

To assemble the skewers:

  1. Take a toothpick or a longer skewer, if available.
  2. First thread a piece of melon, then a piece of feta, and finally a small bunch of arugula. If you are using olives, they can be placed between the melon and feta or at the end of the skewer.
  3. Arrange the skewers on a serving plate.

For the dressing (optional):

  1. Mix extra virgin olive oil with a little balsamic vinegar, salt and pepper and drizzle a small amount over the skewers before serving.

As a final variation, you can add a fresh mint leaf on each skewer for an extra touch of color and freshness.

Interesting Facts

Fruit and cheese skewers are a classic example of sweet and savory pairing, a balance of flavors that is very dear to Mediterranean cuisine, and especially Italian cuisine, where similar recipes have been passed down for generations. In this case, the addition of arugula introduces a slightly spicy note that balances the sweetness of the melon and the saltiness of the feta.
