Melon and Yogurt Tiramisù

Preparation

  1. Start by preparing the yogurt cream: in a bowl, mix Greek yogurt with powdered sugar until you get a homogeneous mixture. If you prefer a softer consistency, you could add some whipped cream.
  2. Peel the melon, remove the seeds and cut it into small cubes. Keep some cubes aside for the final garnish.
  3. Season the melon cubes with lemon juice to enhance the flavor and prevent oxidation.
  4. Set aside some whole ladyfingers for decoration and crumble others into smaller pieces for the layers.
  5. Assemble the tiramisù in transparent glasses or in a dish: create the first layer with crumbled ladyfingers, cover with some of the yogurt cream, then distribute a layer of melon cubes.
  6. Repeat the layers until the glasses or dish are filled, finishing with the yogurt cream.
  7. Refrigerate for at least 2 hours before serving.
  8. Before serving, dust the surface with some unsweetened cocoa and decorate with the melon cubes set aside, the whole ladyfingers and, if you wish, some fresh mint leaves.
