Mediterranean Sea Bream

Ingredients
- 4 sea breams (about 300-400 grams each), already cleaned and descaled
- 10 cherry tomatoes
- 1 untreated lemon, sliced
- 2 cloves of garlic
- A few sprigs of fresh rosemary
- 1 handful of pitted black olives
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- Preheat the oven to 200 °C.
- Wash the cherry tomatoes well and cut them in half.
- In a large bowl, season the sea breams with a drizzle of olive oil, salt, and pepper. Inside each sea bream, insert a slice of lemon, a sprig of fresh rosemary, and a clove of garlic.
- Arrange the sea breams in an oiled baking dish. Add the remaining lemon slices, cherry tomatoes, black olives, and a little more rosemary around them.
- Drizzle everything with a little extra virgin olive oil and bake in the oven for about 20 minutes or until the sea bream is golden and the skin easily detaches from the flesh.
- Once cooked, remove the garlic clove and rosemary from the inside of the sea breams and serve immediately.
