Mediterranean Skillet Chicken

Mediterranean chicken is a dish full of flavors typical of Mediterranean cuisine, with the addition of ingredients like olives, tomatoes, and aromatic herbs that create a perfect combination. Here’s how to prepare it:

Ingredients

  • 4 chicken thighs (or breasts, if you prefer)
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 1 sprig of fresh rosemary
  • 1 sprig of fresh thyme
  • 150 g of cherry tomatoes
  • 100 g of pitted black olives
  • Salt and pepper to taste
  • Juice of half a lemon
  • 100 ml of white wine
  • A pinch of dried oregano

Preparation

  1. Start by washing and drying the chicken thighs well. Salt and pepper them to taste.
  2. In a large skillet, heat the extra virgin olive oil and add the crushed garlic and aromatic herbs (rosemary and thyme). Let them flavor for a couple of minutes.
  3. Place the chicken thighs in the skillet and brown them well on all sides until they are golden brown. This step is important to seal the juices inside.
  4. After the chicken has browned, deglaze with white wine and let the alcohol evaporate on high heat for a couple of minutes.
  5. Add the cherry tomatoes cut in half and the black olives, then the lemon juice, oregano, and adjust salt and pepper if necessary.
  6. Lower the heat, cover the skillet with a lid, and let it cook for about 20-30 minutes, or until the chicken is well cooked and the sauce has slightly thickened.
  7. Occasionally, turn the chicken thighs to ensure they are evenly flavored.

Once cooked, transfer the chicken to a serving dish and drizzle with the cooking sauce. It’s a dish that can be served either hot or at room temperature, excellent with a side of grilled vegetables or a fresh salad.
