Mediterranean Kamut Spaghetti

Mediterranean Kamut Spaghetti is a healthy and tasty variant of the classic pasta dish, using Kamut wheat, known for its superior nutritional qualities and for being more digestible than common wheat. Here’s how to prepare it.

Ingredients

  • 320 g of Kamut spaghetti
  • 250 g of cherry tomatoes
  • 2 cloves of garlic
  • 1 chili pepper (optional)
  • 100 g of pitted black olives
  • 1 handful of desalted capers
  • 1 handful of fresh basil
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Meanwhile, wash the cherry tomatoes and cut them in half or into quarters, depending on the size.
  3. In a large skillet, heat the extra virgin olive oil and add the whole garlic cloves, browning them to flavor the oil.
  4. If desired, add the chili pepper sliced into rings to give a spicy touch to the dish.
  5. Remove the garlic cloves from the oil and add the cherry tomatoes. Cook over medium heat for about 5 minutes.
  6. Add the olives and capers and continue cooking for another 5 minutes to allow the flavors to blend well.
  7. In the meantime, cook the Kamut spaghetti in the boiling water following the package’s time instructions, keeping them al dente.
  8. Drain the pasta, saving some of the cooking water, and pour it into the skillet with the sauce.
  9. Add the hand-torn basil and a bit of cooking water if necessary to bind the sauce.
  10. Toss the spaghetti together with the sauce for one minute, adjusting salt and pepper to taste.
