Mediterranean Gnocchi

  2. In a large pan, heat the extra virgin olive oil with the whole clove of garlic (which you will then remove) or crushed, if you prefer a more intense flavor.
  3. Add the cut cherry tomatoes, pitted black olives, and capers. Cook over medium heat for about 10 minutes, until the tomatoes start to break down, forming a light sauce.
  4. Meanwhile, bring a pot of salted water to a boil for the gnocchi. When boiling, cook the gnocchi following the package instructions, they are usually ready when they float to the surface.
  5. Drain the gnocchi and add them to the pan with the Mediterranean sauce. Gently stir to flavor the gnocchi with the sauce.
  6. Turn off the heat and add the hand-torn basil leaves and crumbled feta (or salmoriglio, if using that option). Season with salt and pepper to your taste.
  7. Serve immediately, plating the gnocchi with a drizzle of raw oil for a final touch.
